How to Use Western Premium BBQ Products Hickory BBQ Smoking Chips
You can use Western Premium BBQ Products Hickory BBQ Smoking Chips to smoke meats in a variety of ways. They can be used in a charcoal, gas, or electric grill.

If you're using wood chips for smoking your meats on a gas or charcoal grill, place dry wood chips in a foil pack or a smoke box and place them over the heat. Let the hickory chips start smoking, and then move them to one side of your grill. Place your meat on the grill and close the lid. Cook to time or temperature you normally would, keeping the lid closed as much as possible. The chips will smoke for 20 to 30 minutes. If you need to cook your meat for a longer period of time, have an extra smoker box or pouch of wood chips ready to go.

When using a charcoal grill or small to medium smoker, we recommend using our chunks instead of chips to get a longer smoking time and better smoking results

If you wish to use our wood smoking chips in a charcoal grill, load your grill with lump charcoal. Light the charcoal using your preferred method; however, we would recommend you avoid using lighter fluid, so your meat retains the natural hickory smoke flavor. Several minutes prior to cooking, fill a smoker tray or a foil pouch with one to two handfuls of hickory chips. Place the tray or pouch on the hottest part of the grill surface until it begins to smoke. Once the chips have begun smoking, move them with tongs to make room for your future meal. Add your meat to the grill, close the lid, and smoke until you achieve that great hickory smoke flavor. The hickory chips will smoke for approximately 20-30 minutes. If you need to cook your meat for a longer period of time, have an extra smoker tray or pouch of wood chips ready to go.

On a gas grill, fill a reusable smoker tray or a foil pouch with two to three handfuls of wood chips. Place the tray or pouch directly over the hottest burner until it begins to smoke. Using tongs, move it to one side to make room for the food. The chips will smoke for approximately 20 to 30 minutes. Be sure to have a second pouch or smoker tray ready when cooking for longer periods of time. See the manufacturer's instructions for use with electric smokers. To make a foil pouch, pour wood chips onto heavy-duty foil, then fold the foil around them. Poke six to eight holes in the top of the pouch using a fork or other sharp tool. Tips and Techniques: To accelerate the smoking process on your gas or electric grill, turn the temperature to high when you first place your pouch or tray on cooking grid. Within a few minutes, the chips will begin to smoke. At that point, turn the temperature to your desired cooking level. If the chips flame up on your gas grill, use a spray bottle of water to douse the flames. This tip does not pertain to electric grills. Wood chips can also be used on charcoal grills as described for gas grills or by placing a pouch directly onto the coals. However, wood chunks work better with charcoal than chips.
